Carla’s Pecan Bars

Crust
2 sticks butter, unsalted
1/2 C powdered sugar
1 t salt
Combine the above and add 2 C flour slowly until completely incorporated. Spread in a 9×13 pan – use plastic wrap to spread out as it is very soft. Bake at 350 for approximately 20-25 minutes.
Topping
2 large eggs – whisked
1 1/2 C light brown sugar
1 T dark Karo syrup (I used Molasses since I didn’t have any Karo) – whisk all together until all combined
2 T flour
1 t salt
1/2 t baking powder
Add and mix into eggs
Add 2 C chopped pecans – keep fairly large
1 C shredded coconut
Pour into prebaked crust and bake at 375 for 20-25 minutes.
This is best made at least a day ahead to give the crust time to absorb the mixture – otherwise it tends to be a bit crumbly
